This is one of those dishes we’re really proud of. The duck breast is aged for five days to bring out a deeper, more concentrated flavor. It’s then grilled and served medium rare, keeping it tender and full of character. What makes this dish special is the balance. The richness of the duck is cut through by a bright, spicy and sour sauce made with three types of citrus—Sunquick, grapefruit, and tangerine. It’s punchy, refreshing, and gives the dish a real lift. On top, we add a mix of fresh mint and herbs that ties everything together. It’s bold, but clean. Flavorful, but never heavy. One of those plates that keeps surprising you with every bite.
